Recipe of the Season: Chocolate Cashew Protein Drops

We couldn’t let February pass by without sharing a favorite sweet treat. 


These mix up quickly and satisfy a chocolate craving in a health way with natural fiber and protein. The dates add the perfect amount of sweetness while the cashews give a little natural boost to your day. Enjoy!


Our seasonal recipes were developed for the “Kids Can Plate” cooking class series and from Amy’s years of teaching in the Healing Garden kitchen. These largely plant-based and whole food recipes are great to share with your family by cooking with them or treating them.

Chocolate Protein Drops

Makes approx. 20 drops


Ingredients

FILLING

1 cup raw unsalted cashews

12–14 plump dates, pitted

1 tbsp chia seeds

2 tbsp cacao powder

2 tbsp chocolate protein powder*

½ cup unsweetened shredded coconut

1 tbsp maple syrup

Zest and juice of ½ of a large organic orange**

* plain or vanilla protein powder can be substituted

** when using zest in any recipe, organic produce is better


CHOCOLATE COATING

1 cup semi-sweet chocolate chips
2 tsp coconut oil
Flaky sea salt


Instructions

  1. Place cashews in a food processor and run until they’re reduced to fine crumbs. 
  2. To the food processor, add in dates, chia seeds, cacao, protein powder and shredded coconut. Blend until combined.
  3. Add in maple syrup, zest and juice of ½ an orange. Blend once more until mixed through.
  4. On the stovetop in a double boiler, melt the chocolate and coconut oil until smooth.
  5. Cover a sheet tray with parchment paper.
  6. Scoop the filling mixture using a small cookie scoop or heaping tablespoon into damp hands and roll to form a ball. This gets sticky and you may need to wash hands in between batches! 
  7. Drop balls in the melted chocolate and roll until covered. Place on the tray allowing a bit of space between each ball. 
  8. Once all balls are covered, drizzle them with any remaining chocolate. Finish each with a few flakes of sea salt on top while chocolate is still wet.
  9. Place tray in the freezer for an hour or so before eating.
  10. Enjoy! Store leftover drops in a sealed container in the freezer.
