Recipe of the Month: Bobo Choses Gazpacho

A savory blend of tops, bottoms and accessories.

Served with a dash of color and pinch of playful prints.


Bobo Choses Gazpacho

Serves 3


Ingredients

500 grams tomatoes (approx. 2 medium size)

200 grams pitted cherries (approx. 1 packed cup)

50 grams green pepper (approx. ½ pepper)

50 grams onion (½ small yellow onion)

75 grams crusty stale bread, cubed

1 small garlic clove

½ cup olive oil 

2 tablespoons apple cider vinegar

2 tablespoons water

Salt and pepper to taste 

 

Instructions

  1. In a blender, combine all ingredients. Blend until smooth. (If needed, add more water to help smoothen.)
  2. If necessary, pass through a sieve.
  3. Season to taste and serve chilled. Top with a swirl of olive oil.

Tips: Using a kitchen scale helps with accurately measuring ingredients—plus it's kitchen math for kids! Using one frozen bag of pitted cherries is faster than pitting fresh cherries! Adding cherries to gazpacho is a great Spanish tip for adding sweetness to balance the acidity of the tomatoes and apple cider vinegar.
